PIZZARIA!
Ingredients :
1700 gm water
80 gm yeast
3000 gm Strong Flour
50 gm salt
50 gm Olive Oil
30 gm Sugar
Methods :
- Mixing : use 'Straight Dough' method for 8-10 minutes using the medium speed, no.2
- Fermentation : 1 1/2 hours for 27C (80F) or 2 hours for 24C (75F)
- Weighing : divide the dough and round it following these guide [330g-360g(30cm), 390g-450g (35cm), 510g-600g(40cm)
- After it's been rested on the pantry, punch and flatten the dough.
- Put the dough into a tray and spread it with Olive oil, Tomato Coulis.
- Add on the capsicum, Onions, olive and of course CHEESE! it is recommended to use mozzarella for chewiness and cheddar for taste of saltiness.
- Bake : 290C (550F) until the cheese melt or turned to brownish colour.

REMINDER : olive must not be placed above the cheese!
