090211 Pizzaria & French Bread

*mozzarella cheese*

*cheddar cheese*

*olive*

*sliced tomato*

*capsicum*

*sliced onions*


*tomato Coulis*

PIZZARIA!

Ingredients :
1700 gm water
80 gm yeast
3000 gm Strong Flour
50 gm salt
50 gm Olive Oil
30 gm Sugar


Methods :
  1. Mixing : use 'Straight Dough' method for 8-10 minutes using the medium speed, no.2
  2. Fermentation : 1 1/2 hours for 27C (80F) or 2 hours for 24C (75F)
  3. Weighing : divide the dough and round it following these guide [330g-360g(30cm), 390g-450g (35cm), 510g-600g(40cm)
  4. After it's been rested on the pantry, punch and flatten the dough. 
  5. Put the dough into a tray and spread it with Olive oil, Tomato Coulis.
  6. Add on the capsicum, Onions, olive and of course CHEESE! it is recommended to use mozzarella for chewiness and cheddar for taste of saltiness.
  7. Bake : 290C (550F) until the cheese melt or turned to brownish colour.

REMINDER : olive must not be placed above the cheese!
